Spiced Apricot Oatmeal with Peanut Butter

Mmm, peanut butter. It’s probably one of my favorite foods. When I was growing up, a common snack request among my siblings was, “Mom, can I have peanut butter on a spoon?”

My own children have also inherited this love for peanut butter. They love to lick the spoon when it’s been used for peanut butter. After today’s delicious breakfast oatmeal, I actually had to dip a few extra spoons in the peanut butter so everyone would have a spoon to lick.

I especially love this salty, creamy nut butter when combined with things like chocolate, spices, or fruit. This oatmeal, with its combination of peanut butter, dried apricots, cinnamon, and nutmeg, was pretty much the perfect mixture of breakfast flavors.

Spiced Apricot Oatmeal with Peanut Butter
Serves 6
1 cup milk of choice
4 cups water
1/4 tsp salt
1 cup dried apricots, chopped
3 cups rolled oats
1 tsp cinnamon
1/2 tsp nutmeg
6 tbsp peanut butter
Sweetener of choice
Milk of choice

Combine water, milk, salt, and apricots in large saucepan. Bring to a boil and add oats, cinnamon and nutmeg.

Reduce heat and cook, stirring frequently, for 5 minutes or until desired texture is reached.

Top each serving with 1 tbsp peanut butter, plus sweetener and milk as desired.
