My parents loved to save money, especially on their food bill. When they found a great deal, they would stock up so that they wouldn’t have to buy that particular food at regular price for a very long time.
That was how we ended up with a huge pile of boxes full of MREs in the garage, stacks of Shredded Wheat in the pantry, several cases of juice under the bathroom sink – and a large box of chocolate chips under the stairs.
I love chocolate chips.
My older sister somehow got into her head that, since we had so many chocolate chips, it would be okay to take a bag of them upstairs to our room, to snack on whenever we wanted. What started as a small snacking spree ended with the two of us consuming, over the course of the next several weeks, about half of the box of chocolate chips.
My parents were not happy when they found out.
I’m not proud of what we did. But I still love chocolate chips.
This particular oatmeal recipe does not really require a handful of chocolate chips. But sometimes you just need some indulgence on a cool Autumn morning, and that little handful of chocolate chips really hit the spot.
Cozy Sweet Potato Banana Oatmeal
5 cups water
1/2 small sweet potato, cooked
3 cups oats
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
Sweetener of choice
Milk of choice
Combine water and salt in large saucepan, and bring to a boil.
While waiting for the water to boil, puree sweet potato and banana, using either food processor or hand blender.
When water comes to a boil, add oats, sweet potato/banana mixture, spices, and vanilla. Turn heat to medium and cook, stirring occasionally, for 5-10 minutes, until desired texture is reached.
Add small handful of chocolate chips to individual servings, and top with sweetener and milk of choice. Stir in those delicious chocolate chips and let them get all melty and yummy.
